Delicious on a cold winter's day!

Per Serving:

In a small bowl, whip the egg white with the vanilla until stiff.  Place a generous tablespoon of whipped egg white into the bottom of a cup.  Pour the hot coffee into the cup and add the cream.  The egg white will rise to the top.  Serve at once.

Note: One beaten egg white will be enough for 3 - 4 cups of coffee.

Cardamom & Orange Coffee

A densely flavored dessert drink, for 2 servings

In the coffee pot, combine the coffee grounds, cardamom, and orange zest.  Add enough boiling water for 2 servings and let steep for about 4 minutes. If using a plunger pot, press the plunger. Otherwise, pour the mix through a filter. Sweeten to taste with raw or brown sugar & serve immediately.

 Spiced Coffee

Store in a dark place for 2 weeks before serving...

2 cups sugar

2 cups water

2 oz. ground coffee

1 1/2 cups brandy or vodka

1 vanilla bean, cut in 1/2 lengthwise

Bring sugar and water to a boil, stirring to dissolve sugar. Add coffee and simmer for 3 minutes.  Cool. Add brandy and vanilla bean.  Pour into a bottle, seal tightly and store at room temperature for 2 weeks.  Strain out vanilla bean before serving.  Makes 1 quart.

Viennese Coffee

  • 4 - 6 ounces of freshly brewed hot coffee per serving
  • Softly whipped cream
  • Cinnamon, cloves, or freshly grated nutmeg, for dusting

Pour the coffee into a clear, stemmed glass and top with a dollop of whipped cream.  Dust the cream with ground cinnamon, cloves, or nutmeg if desired.  Serve at once.

Cafe Belgique

Enjoy a cup of this in the late afternoon.

Per Serving:

  • 1 large egg white
  • 1/2 teaspoon vanilla extract
  • 4 - 5 ounces freshly brewed hot coffee
  • 1 to 2 tablespoons cream or half and half

Irish Coffee

Warms the body and the soul

Per serving

  • 1 teaspoon sugar
  • 4 - 6 ounces freshly brewed hot coffee
  • 1 ounce Irish whiskey or scotch
  • Softly whipped cream for serving

Place the sugar in the bottom of an Irish coffee glass and pour in the coffee. Add the Irish whiskey and top with a tablespoon of whipped cream.  Serve immediately.

French Press Coffee

  • Add 5 scoops of coffee (best if ground just prior to brewing)
  • Boil 8 cups of water
  • When water boils, wait a few seconds before pouring
  • Saturate the grounds evenly, filing pot to 1/4 - 1/2 of capacity
  • When coffee blooms (about 30 seconds) stir gently with chopstick (or non-metallic spoon)
  • Allow coffee grounds to sink to the bottom
  • Continue filling the pot to about 1" below the rim
  • Place the top of the press on the pot, with the plunger gently resting on the coffee
  • Steep for 6 - 8 minutes
  • Gently press plunger to the bottom of the pot
  • After pouring coffee into cups, pour any remaining coffee into a carafe
  • Enjoy!
  • Ethiopian Coffee, coarsely ground
  • 1/2 teaspoon of freshly ground cardamom
  • The zest of 1 orange
  • Raw or brown sugar

 A great dessert coffee, this recipe is for 3 - 4 cups...

  • 8 whole cloves
  • 1/4 teaspoon freshly grated nutmeg
  • 1 cinnamon stick
  • One 3 - 4 inch strip orange zest
  • One 3 inch strip lemon zest

​Place the spices and citrus zests in the bottom of a filter-drip coffee pot.  Brew the coffee as usual, letting it drip onto the spices. Strain before serving hot.  Enjoy!

A Great Cappuccino

Step 1: Insert a steam-wand tip to 1/2 inch into a small metal pitcher of cold milk.  As the milk foams, lower the pitcher at the same rate the milk rises. no bobbing up and down.

Step 2: The correct milk temperature is 148 - 155 degrees, or about the temperature of a car hood in the summer heat; hot, but not burning hot.

Step 3: Make espresso.

Step 4: Let the foamy milk settle for about 15 seconds. Then swirl the container for a few seconds, until the foam and milk are blended.  It's ready when the surface of the milk becomes shiny.  Pour the milk on top of the espresso without using a spoon.

Step 5. Enjoy!
